storage notes:

Separate roots from greens, leaving an inch of stem. Store the beetroots, with the rootlets (or "tails") attached, unwashed, in a plastic/reusable bag in the crisper bin of your refrigerator. They will keep for several weeks. Wash and spin beet greens like other leafy vegetables (see "Washing Leafy Greens") or keep dry, unwashed greens in a sealed plastic bag in the refrigerator for up to 1 week.
